Street Corn

Delish

  • 6 ears of corn
  • 1/2 c mayonnaise
  • 1/2 c cotija cheese
  • 2 limes, squeezed
  • 2 tbsp fresh cilantro, chopped
  • 2 tsp tajin mexican and lime chili powder
  • 1 tsp regular chili powder
  • salt

Boil corn on the cob for 7 minutes. While cooling, mix together remaining ingredients. Cut corn off the cobs. Add to mayo mixture. Sprinkle with additional cilantro and cheese.
