Black Beans

- 225 g dried black beans, soaked overnight, then rinsed
- 1/2 large onion, finely chopped
- 2 garlic cloves, minced
- 1 roma tomato, finely chopped
- 1 tsp ground cumin
- 1/4 tsp dried oregano
- 1 tsp smoked paprika
- 1/4 tsp chili powder
- 1/4 tsp cayenne pepper
- 1/2 tsp salt
- 2 c chicken stock
- 1 lime
- 2 tbsp red onion, finely diced
Combine all ingredients except lime and red onion in a medium saucepan. Bring to a boil. Reduce heat. Simmer for 2-3 hours or until beans are tender.
30 minutes before beans are done, mix red onion with the juice of 1/2 a lime.
Right before serving, stir in the juice of 1/2 a lime.
Top each serving with sour cream lightly sprinkled with cumin and garnish with onions.
