Coconut Rice

- 380 g Jasmine rice
- 14 oz Can of coconut milk
- 1 c Water
- 5 tsp White sugar
- 1/2 tsp Salt
Rinse rice in water until the water runs clear.
Drain rice, then soak in water for one hour.
Drain rice well in colander. Let sit for five minutes, allowing any additional liquid to drain.
Preheat oven to 400.
Place rice in 8 inch pan.
In a medium saucepan, heat milk, water, sugar and salt over high heat. Bring to a boil, and stir to dissolve the sugar.
Pour hot liquid over the rice and stir gently but quickly. Spread rice evenly in pan. Cover quickly with foil and bake for 40 minutes.
Remove from the oven and let rest for 15 minutes, covered and undisturbed.
Fluff with fork and serve.
