Home Fries

  • 4 lb russet potatoes, peeled and cut into small cubes
  • 1 lb bacon, diced
  • paprika
  • salt
  • onion powder
  • black pepper

Cook bacon in a cast iron skillet. Scoop out onto paper towel lined plate. Drain a couple tablespoons of bacon grease out of the pan, but leave most of it in the pan.

Add a layer of potatoes to the skillet. Sprinkle with salt, paprika, onion powder and black pepper. Add another layer of potatoes and sprinkle again seasonings. Repeat until all potatoes are in the pan. Fry for a few minutes then flip and gently stir. Repeat until potatoes are browned, cooked through and crispy. Make sure to let them sit in the pan and fry; don't constantly stir. Taste. Adjust seasonings. Add bacon back to the pan.

Serve with hot sauce and/or cheese sauce.
