Roasted Carrots
- 2 lb carrots
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried rosemary
Preheat oven to 400. Peel carrots and cut diagonally into 1/2 inch slices. Add to baking sheet (with sides on it, preferably). Pour oil over carrots and sprinkle with seasonings. Toss to coat carrots evenly. Bake at 400 for 30 minutes, stirring after 15, or until carrots reach desired softness.
