Broccoli Parmesan Fritters

  • 1 medium bundle fresh broccoli, broken into florets
  • 1 egg
  • 1/2 c flour
  • 1/3 c grated parmesan cheese
  • 1 clove garlic, minced
  • 1/2 tsp kosher salt
  • black pepper
  • crushed red pepper flakes

Steam broccoli until tender but not mushy. In a separate bowl, beat egg; add flour, cheese, garlic, salt and pepper. add the cooked broccoli, and, using a potato masher, mash the broccoli up a bit; but not into a mush. Drop batter by large spoonfuls into hot oil/butter. Flatten slightly into rounds. Fry until browned on both sides.
