Mashed Potatoes
- 5 lb russet potatoes, peeled and cubed
- 2 sticks butter
- 8 oz cream cheese
- milk
- salt
Boil potatoes for 10-12 minutes. Drain. Put back in pot on the burner and stir for a minute so all the water evaporates. Add butter, cream cheese about 1/2 c. milk and salt. Beat with electric mixer until smooth. Taste. Add more milk if they're too thick and adjust salt to taste.
