Chicken Kiev (Russian meal)

  • boneless, skinless chicken breasts
  • dill (fresh)-small handful
  • chives (fresh)-small handful
  • parsley (fresh)-small handful
  • 1 glove garlic, minced
  • flour
  • egg/water mixture
  • breadcrumbs
  • frozen butter

Butterfly filets by slicing down the side and opening out. Pound, but not too thinly. Chop herbs and toss together w/garlic. Cut frozen butter into 1-2 TBS pats. Roll pats into herb mixture, pressing firmly to coat. Put butter on filet and roll up carefully trying not to rip. Secure w/wooden skewers (cut so they're not too long). Salt and pepper. Dip filet into flour, then egg mixture, then breadcrumbs. Put into preheated veg. oil (pretty deep oil)
