Pop Over Chicken Tarragon

  • chicken pieces
  • 3 tbsp oil, divided
  • 3 eggs
  • 1 1/2 c milk
  • 1 1/2 c flour
  • 3/4 tsp poultry seasoning or crushed tarragon
  • 3/4 tsp salt

Easy Mushroom Sauce

  • 1 can Cr of Mush soup
  • milk to desired consistency

Brown chicken in 2 TBS oil. Season w/S&P. Place chicken in well-greased 13x9x2 baking dish. In mixing bowl, beat eggs; add milk and 1 TBS oil. Stir together flour, poultry seasoning and salt. Add to egg mixture and beat til smooth. Pour over chicken. Bake 350 55-60 min. Serve with Easy Mushroom Sauce (heat soup with desired milk and stir til smooth).
