Basil Cream Chicken

  • 1 1/2 lb boneless skinless chicken breasts, cubed
  • 1 1/3 c chopped gr onions
  • 2 tbsp veg oil
  • 1/2 c butter/margarine
  • 1/4 c flour
  • 2 c chicken broth
  • 1 c whipping cream
  • 2 tsp dried basil
  • 1/4 tsp pepper
  • fettucini

In a skillet, saute chicken and onions in oil til the chicken is no longer pink. Meanwhile, in a large saucepan, melt butter. Stir in flour until smooth. Gradually add broth and cream. Stir in basil and pepper. Bring to a boil, cook and stir from 2 min or until thickened. Stir in chicken mixture. Serve over fettucini.
