Creamed Chicken
(my version of something)
Note from old recipe card: Sept '88--very good
- 2 tbsp butter
- 1/2 small onion
- 1 stalk of celery
- 3 tbsp butter
- 4 tbsp flour
- 2 c milk
- 1 can Cr of Mush soup
- 2 chicken breast, cooked and cubed (good recipe for leftover chicken)
Optional ingredients
- 1 tbsp chopped pimiento
- 1/4 c parm cheese
- 2 oz sliced mushrooms, drained
- 1/2 c slivered almonds (for topping)
Saute onion and celery in 2 TBS butter. Melt 3 TBS butter, add flour and stir til smooth. Cook 1 min stirring constantly until thickened and bubbly. Add milk slowly stirring til thick and bubbly. Add soup, stirring til smooth. Stir in chicken and onion/celery mixture as well as any optional ingredients desired. Note: this can be made ahead and put into lightly greased casserole and baked 350 for 30-40 min until bubbly. Serve over buttered toast triangles.
