Creamed Chicken

(my version of something)

Note from old recipe card: Sept '88--very good

  • 2 tbsp butter
  • 1/2 small onion
  • 1 stalk of celery
  • 3 tbsp butter
  • 4 tbsp flour
  • 2 c milk
  • 1 can Cr of Mush soup
  • 2 chicken breast, cooked and cubed (good recipe for leftover chicken)

Optional ingredients

  • 1 tbsp chopped pimiento
  • 1/4 c parm cheese
  • 2 oz sliced mushrooms, drained
  • 1/2 c slivered almonds (for topping)

Saute onion and celery in 2 TBS butter. Melt 3 TBS butter, add flour and stir til smooth. Cook 1 min stirring constantly until thickened and bubbly. Add milk slowly stirring til thick and bubbly. Add soup, stirring til smooth. Stir in chicken and onion/celery mixture as well as any optional ingredients desired. Note: this can be made ahead and put into lightly greased casserole and baked 350 for 30-40 min until bubbly. Serve over buttered toast triangles.
