Chicken and Rice

  • 1/4 c mayo
  • 1/4 tsp garlic powder
  • 3/4 tsp dried rosemary
  • 3/4 tsp salt
  • black pepper
  • 1 chicken breast, halved horizontally
  • 1 c rice
  • 2 c chicken broth
  • 1/4 c grated parmesan cheese

Preheat oven to 350.

In a small bowl mix together mayo, garlic powder, rosemary, salt and pepper.

In a medium saucepan, bring chicken broth to a boil. Stir in rice.

Grease 8" baking dish. Pour rice and broth into dish. Spread mayo mixture over chicken breast halves and place on top of rice. Sprinkle parmesan over the whole dish.

Bake for 30 minutes.
