Chicken Strips

- 2 kg chicken breasts
Batter
- 2 eggs
- 1 c milk
- 1 c chicken broth
- 2 1/2 tsp salt
- 1/2 tsp pepper
- 1 1/2 c flour
Breading
- 6 c flour
- 4 tsp salt
- 4 tsp paprika
- 2 tsp pepper
Cut chicken into strips.
In a large bowl, whisk together batter ingredients.
Dump all of the chicken strips into the batter and mix together.
In a second large bowl, whisk together breading ingredients.
Pour half of the breading mixture into a large plastic bag.
In batches, place chicken strips into the breading bag and shake to coat. Fry in 350 degree oil in dutch oven. Remove with a slotted spoon. Repeat until most of the flour is clumpy/gone. Then dump in remaining breading ingredients and continue dredging and frying until all the chicken is gone.
Yield: 5 lbs//4 meals
