Orange Chicken

- 1 1/2 c sweet chili sauce
- 1 large orange
- 1 tbsp soy sauce
Empty a bottle (1.5 cups) of sweet chili sauce into a small saucepan over medium heat. Add the zest of the entire orange, plus all of its juice and the soy sauce. Stir occasionally to prevent the bottom from burning. Heat the sauce until boiling starts and then remove from heat.
Toss with tempura-fried chicken cubes to coat. Serve over rice.
Optionally, serve with minced basil for garnish.
Makes 2-3 servings.
Notes
- You can add extra orange juice, but most of the flavor comes from the zest.
- This recipe is for a basic sweet chili sauce (e.g. Mae Ploy, Trader Joe's, Melinda's, Panda Express). If you use something like PF Chang's Sweet Chili sauce that already has soy sauce, then you don't need to add it yourself.
