Skillet Potatoes (Russian meal)

  • olive oil (not too much)
  • 2 tbsp butter
  • 3 medium potatoes, thinly sliced
  • 2 onions, thinly sliced
  • S & P to taste

Heat oil and butter in skillet. Add potatoes and onions. S&P and toss. Weigh down w/plate and heavy can pressed on potatoes. Leave them to brown--about 15 min. Turn, weigh down again and cook approx 15 more min. Decorate w/parsley, if desired.
