Irish Potato Casserole
Scofield Cookbook (Feb '90-very good)
- 4-5 potatoes, peeled
- 4 oz sour cream
- 1/8 c chopped chives
- 4 oz cream cheese, softened
- 1/4 c butter
- 1 tsp salt
- paprika
Boil potatoes til tender. Drain and mash. Add all other ing except paprika and spoon into lightly buttered casserole. Sprinkle paprika over top. Cover and refrigerate overnight. Remove from frig 15 min before baking. Uncover and bake 350 for 30 min.
