Potato Wedges

Old recipe card-Jer's mom Nov '96

  • 3 1/2 lb medium size red potatoes (cut in 4ths)
  • 1 med. onion, coarsely chopped
  • 2 tbsp olive oil
  • 2 tsp salt
  • 2 tsp dried Italian seasoning or Rosemary leaves, crushed
  • 3/4 tsp black pepper

Pour oil on 11x14 metal baking sheet. Toss potatoes in oil and sprinkle on seasonings, tossing to coat all sides.

Bake 400 40-45 min.
