Make-Ahead Potatoes

- 10 large potatoes, peeled and quartered
- 1 c sour cream
- 1 pckg (8 oz) cream cheese, softened
- 6 tbsp butter
- 2 tbsp dried minced onion
- 1/2 tsp salt (or up to 1 tsp)
- paprika
- chives and pepper, optional (Laura added)
- 1 bay leaf (Laura added)
Boil potatoes (w/bay leaf says Laura) til tender (approx 20-25 min). Drain and place in a bowl; mash. Add sour cream, cream cheese, 4 tbs butter, onion and salt; stir until smooth and the cream cheese and butter are melted. Spread in greased 13x9 baking dish. Melt remaining butter; drizzle over potatoes. Sprinkle w/paprika. Refrigerate of bake immediately, covered at 350 for 40 minutes; uncover and bake 20 min longer. If potatoes are made ahead and refrigerated, let stand at room temperature for 30 minutes (Laura has to zap in microwave 3 min if refrig overnight).
