Keto Chocolate Mousse

  • 2 cans full fat coconut milk
  • 3 tbsp monkfruit granulated sugar
  • 4 tbsp cocoa powder

Chill cans of coconut milk in the fridge overnight. Don't shake or move around. Carefully open the lids and scoop out the cream that has formed at the top. Discard the liquid at the bottom. With electric handheld mixer, whip coconut cream and sugar until sugar is dissolved and cream is the consistency of pudding. Beat in cocoa powder.
