Baked Potato Soup

  • 48 oz Potatoes
  • 2/3 c Butter
  • 2/3 c Flour
  • 3/4 tsp Salt
  • 1/4 tsp White pepper
  • 6 c Milk
  • 1 c Sour cream
  • 1/4 c Green onions
  • Shredded cheddar cheese
  • Crumbled bacon

Bake potatoes. Cool. Peel. Cut into small cubes.

In a large pot, melt butter. Whisk in flour, salt and pepper. Gradually whisk in milk. 

Bring to a boil, stirring constantly. Boil for two minutes. 

Remove from the heat. Whisk in sour cream. Stir in potatoes and green onions. 

Ladle into bowls. Top each serving with cheese and bacon.
