Chili

Chili

  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 1 lb 93/7 ground beef
  • 2 tbsp tomato paste
  • 2 1/2 tbsp chili powder
  • 1 tbsp sugar
  • 1 tbsp garlic powder
  • 1 1/2 tsp salt
  • 1/4 tsp cayenne
  • 1/2 tsp fresh ground black pepper
  • 2 c beef broth
  • 15 oz petite diced tomatoes
  • 16 oz dark red kidney beans, drained and rinsed
  • 8 oz tomato sauce
  • few dashes worcestershire sauce
  • few dashes liquid smoke

Saute onions in olive oil until soft. While onion is cooking, combine all dry spices. Add ground beef and cook until brown. Soak up most of the grease with a couple paper towels. Stir in tomato paste and dry spices until all meat is evenly coated. Add remaining ingredients. Bring to a boil. Simmer for 30 minutes. Add more water if chili gets too thick.

Serve with tortilla chips, sour cream, sharp cheddar cheese and hot sauce.

Yield: 4 big servings
