Baked Feta, Tomatoes and Chickpeas

  • 110 g Feta (1/2 a block)
  • 1 1/2 - 2 c. Cherry tomatoes (or one large tomato, diced)
  • 60 g (1/4 c.) Olive oil
  • 1/2 Can chickpeas
  • 2 tbsp Chopped, fresh herbs
  • Salt
  • Pepper

Place feta in the middle of a small pan. Scatter tomatoes around the feta. Drizzle tomatoes with olive oil, salt and pepper. Toss to coat. 

Bake at 400 for 15 minutes. 

Add chickpeas to the tomatoes. Add more salt and pepper. Stir. 

Bake for 10 more minutes. 

Broil for 5 minutes. 

Scoop tomatoes, chickpeas and feta into bowls to serve. Garnish with herbs. Serve with bread.
