Enfrijoladas

  • 1/2 lb dried black beans
  • 1 yellow onion, cut in half
  • 2 garlic cloves, minced
  • 1/2 tsp cumin
  • 1/2 tsp chili powder
  • salt to taste
  • 6 corn tortillas

Soak black beans in 1 quart hot water for at least one hour. In a large pot, add beans with their soaking water, onion, garlic, cumin, chili powder and salt. Boil for an hour. Remove onion. Let simmer for another 1-2 hours until cooking liquid is almost all evaporated and beans are tender. Add more water if necessary.

When beans are tender and there is just a little bit of water left, heat corn tortillas in microwave. With tongs, submerge a corn tortilla in the beans on both sides. While in the beans, fold the tortilla in quarters, then place on plate. (3 tortillas per person)

Yield: 2 servings

Top with sour cream, lime, jalapenos and chopped fresh cilantro
