Egg Salad-High Protein
Eating for Life pg 266 (my version)
- 6 eggs
- 2 tbsp may (he has 1 1/2 TBS Miracle Whip/Free)
- 1 tbsp sweet pickle relish (he has 1 1/2 tsp)
- 2 tsp mustard (he has 1 1/2 TBS)
- 1/2 stalk celery, sliced (optional)
Boil eggs. When cool, chop (use all 6 egg whites, but only 2 egg yolks). Mix in remaining ingredients. He makes this as an open face sandwich with a piece of healthy toast and a leaf of lettuce, then adds salad and tops with avocado slices.
