White Cake

  • 6 tbsp butter
  • 2 c sugar
  • 2/3 c oil
  • 2 tsp vanilla extract
  • 2 tsp almond extract
  • 2/3 c all purpose flour
  • 1/4 c all purpose flour
  • 2 c cake flour
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1 c whole milk
  • 6 egg whites

Preheat oven to 350. Parchment paper and grease two 8 inch cake pans. Cream together butter and sugar. Add in oil and beat until fluffy. Add extracts at the end and gently mix. In a separate bowl, whisk together flours, baking powder and salt. Add to creamed mixture along with milk. Turn the kitchen aid on low and mix just until everything is incorporated. Do no overbeat. With a handheld electric mixer, beat egg whites until stiff peaks form. Very gently, fold egg whites into cake mixture until no egg white streaks remain. Do not overmix.

Divide evenly into pans and bake for 25-30 minutes or until toothpick inserted in the middle comes out clean.

Cancel
