Snickerdoodles

- 2 3/4 c (360 grams) all purpose flour
- 2 tsp cream of tartar
- 1 tsp baking soda
- 1/4 tsp salt
- 2 sticks (225 grams) butter, softened
- 1 1/2 c (300 grams) sugar
- 2 eggs
in kitchen aid with paddle attachment, whip butter. Add sugar and beat for a couple minutes until fluffy. Beat in eggs. In a separate bowl, whisk together flour, cream of tartar, baking soda and salt. Add to butter mixture and slowly mix just until combined, then stop.
In a small bowl, mix together 1/3 c. sugar and 1 tbs. cinnamon.
Preheat oven to 375 degrees.
Roll cookie balls in cinnamon sugar. Bake 8 at a time on a cookie sheet for about 10 minutes.
