Shrimp and Grits

  • bacon
  • assorted mini bell peppers, sliced thinly
  • minced fresh garlic
  • green onions
  • fresh parsley
  • white whine
  • lemon juice
  • uncooked shrimp
  • heavy cream

Make grits using chicken broth instead of water and add a splash of heavy cream. Whisk in cheddar cheese and cayenne pepper.

Cook bacon in a skillet. Scoop out bacon into a bowl, reserving some of the bacon fat in the bottom of the pan. Cook peppers until almost soft. Add garlic, green onion and parsley and stir together (do not cook). Remove from the pan and add to the cooked bacon. Deglaze the pan with white wine. Cook shrimp. As soon as you flip the shrimp to cook on the other side add the previously cooked ingredients back to the pan. Add lemon juice and a splash of heavy cream.

Spoon grits onto a plate. Top with shrimp mixture and top with additional chopped parsley.
