Salted Maple Pudding

Cake
- 2/3 c (165 ml) Pure maple syrup
- 1/2 c (125 g) Brown sugar
- 250 g Butter, melted and cooled
- 150 g Sour cream
- 1/2 c (125 ml) Milk
- 2 tsp Vanilla extract or vanilla bean paste
- 2 Eggs
- 2 c (240 g) Flour
- 1 tbsp Baking powder
- 1 tsp Salt
Salted Maple Butterscotch
- 100 g Butter
- 1 c (250 ml) Pure maple syrup
- 1/2 c (125 ml) Heavy cream
- 1/4 tsp Salt
Preheat oven to 350.
Grease 8x8 inch pan.
For the cake: In a medium bowl, whisk together flour, salt and baking powder.
In a large bowl, whisk together remaining ingredients. Pour wet into dry and whisk gently to form a smooth batter.
Pour into greased pan. Bake for about 30 minutes or until top is just firm to the touch and a toothpick inserted into the middle comes out with moist crumbs.
For the butterscotch sauce: Melt butter in a saucepan over medium heat. Add maple syrup, cream and salt. Stir together and bring to a simmer. Simmer for 10 minutes.
Serve cake warm or at room temperature with warm butterscotch sauce and ice cream or heavy cream.
