Red Velvet Cake with White Chocolate Frosting

Cake
- 2 c flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp salt
- 1/4 c cocoa
- 2 c sugar
- 1/2 c oil (originally 1 c)
- 2 eggs
- 1 c buttermilk
- 2 tsp vanilla
- 1 tbsp red food coloring
- 1 tsp white vinegar
- 1/2 c hot coffee
Frosting
- 1 c white chocolate chips
- 1 c softened butter
- 5 c powdered sugar
- 2 tbsp milk
- 2 tsp vanilla
In a medium bowl, whisk together flour, baking soda, baking powder, cocoa and salt. Set aside. In a large bowl, combine the sugar and vegetable oil. Mix in the eggs, buttermilk, vanilla and food coloring. Combine the wet with dry. Stir in the coffee and vinegar. Grease 2 nine inch round pans. Pour batter evenly in pans. Bake at 325 for 30-35 minutes or until knife inserted in the middle comes out clean. Cool.
For frosting, melt chocolate chips in the microwave. In a mixing bowl, cream butter until fluffy. add 2 c. powdered sugar and melted chocolate. beat until smooth. Add remaining powdered sugar and milk and vanilla. Whip until fluffy.
Yield: whole cake. 12 servings
