Potato Bread

  • 1 tsp active dry yeast
  • 1/4 c warm water
  • 1/2 tbsp sugar
  • 3 tbsp shortening
  • 3 tbsp softened butter
  • 1/2 c warm milk
  • 3 tbsp sugar
  • 3/4 c mashed potatoes
  • 3/4 tsp salt
  • 1 egg
  • 2 1/2 c bread flour (2 1/2 - 3 c)

In a small bowl combine warm water, 1/2 tbs. sugar, and yeast. Let stand for five minutes. Warm milk to 115. Melt shortening and butter. In the bowl of a stand mixer, add shortening, butter, milk, sugar, potatoes, salt and egg. Whisk in yeast mixture until combined. Using paddle attachment add flour 1/2 cup at a time. Beat until smooth and only slightly sticky. Knead by hand if necessary. Place in greased bowl. Let rise in the fridge overnight. Form into loaf, buns, rolls, etc. and let rise until double via steam in oven.

Bake at 375 for 25-40 minutes.
