Pie Crust

  • 325 g flour
  • 1/2 tsp salt
  • 1 tbsp sugar
  • 1 stick salted butter (+ 1/4 tsp salt if unsalted)
  • 1/4 c ice water

Mix 195 grams of flour with salt and sugar. Then cut the stick of butter into 1/2-inch cubes and blend the flour mixture and butter together into a paste. Add the rest of the flour (130 grams) and gently fold it in until the dough becomes shaggy. Add the water and continue folding until just combined and the dough sticks to itself without breaking apart when pinched. If the dough breaks after pinching it, add a tablespoon of water and repeat. Repeat until the dough holds together when pinched.

Split the dough into two balls. Place each ball between two sheets of plastic wrap and roll the dough out so that there is an inch of overhang from your pie pan. Alternatively, just roll the dough into a disc that meets the edges of the plastic wrap.

Put the discs in the fridge for 5 minutes, then remove, peel off the plastic wrap, and lay gently in the pie pans. Roll the outer crust to rest on top of the pie pan and crimp the edges.

Place squares of parchment paper or foil over the dough with rice, beans, or pie weights on top. Put in the freezer for 10 minutes, then directly into a 400 F oven for 20-30 minutes until the crust is golden.
