Peanut Butter and Dried Cherry Oatmeal Cookies

- 1 c oats
- 1 c packed dark brown sugar
- 1/2 c dried sour cherries
- 1 c chunky peanut butter
- 3 tbsp softened butter
- 2 eggs
- 1 tsp vanilla
- 1/4 tsp salt
- 1 c flour
Pulse oats in food processor until between finely and coarsely ground. Pour into a medium sized bowl. Add sugar and cherries. In a separate bowl, combine peanut butter and butter. Beat with an electric mixer until light and fluffy. Add eggs, vanilla and salt. Beat until smooth. Add oat mixture and stir by hand with a wooden spoon until blended. Stir in flour. Drop by tablespoonfuls onto greased baking sheets. Bake at 375 for 8-10 minutes or until lightly browned.
