Naan

Metric

  • 300 g water
  • 1 g yeast
  • 375 g bread flour
  • 8 g salt

Volumetric

  • 1 1/4 c water
  • 1/4 tsp yeast
  • 3 c bread flour
  • 1 1/2 tsp salt

Whisk together flour, yeast and salt in a bowl. Stir in water with a spoon until dough forms. Cover with plastic wrap and let sit for 6-8 hours. 

Note: Can make in advance, but adjust yeast as follows:
24 hours: a pinch
12 hours: 1/8 tsp
6 hours: 1/4 tsp

Yield: 4 large naan
