Lemon Lavender Scones

  • 1/2 c greek yogurt
  • 1/2 lemon's juice and zest
  • 1 tsp baking soda
  • 2 c flour
  • 1/3 c sugar
  • 1 tbsp baking powder
  • 8 tbsp cold butter, cut into cubes
  • 2 tbsp melted butter
  • 1/3 c heavy cream
  • 1 1/2 tsp dried lavender buds
  • 1 egg
  • other half of lemon's zest

Nate's Trial

  • 1/2 c sugar
  • 1 tsp baking powder
  • 1/2 tsp salt

Preheat oven to 425. In a small bowl, whisk together yogurt, lemon juice, zest and baking soda.

In the bowl of a stand mixer, whisk together flour, sugar and baking powder. Attach paddle. Cut in butter until crumbly. Add the egg, lemon juice, zest, heavy cream, lavender and melted butter to the yogurt mixture. Pour into dry mixture. Stir together with a fork until dough comes together. Turn out onto floured surface. Knead gently 5-10 times. Divide into two equal balls. With the palm of your hand, press into disks 1 inch thick. Score into fourths. Brush with additional melted butter, and sprinkle with sugar. Bake for 12-15 minutes. After cooling for several minutes, spoon glaze over top. Glaze: powdered sugar, heavy cream, vanilla and salt.
