Lemon-Dill Rice
Jer's Mom (Note: Aug '96-very good)
- 1 1/2 c chicken broth
- 1/4 c onion, finely chopped
- 1 tbsp butter
- 1 tsp finely shredded lemon peel
- 1 bay leaf
- 3/4 c long-grain rice
- 1 tbsp lemon juice
- 1 1/2 tsp snipped fresh dill
In saucepan, combine broth, onion, butter, lemon peel and bay leaf. Bring to boil. Reduce heat. Stir in rice. Cover and cook 15-18 min til liquid is absorbed. Let stand, covered, for 5-10 min. Stir in lemon juice and fresh dill.
