Graham Crackers

- 112 g softened butter
- 210 g light brown sugar
- 1 tsp vanilla
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tbsp honey
- 1 dash of cinnamon
- 120 g all-purpose flour
- 240 g whole wheat flour
- 1/2 c milk
Mix butter and brown sugar until combined. Add honey, vanilla, baking powder, baking soda, salt, and cinnamon and mix until evenly incorporated. Mix flours first, then mix in flour then milk alternating between the two, beginning and ending with the flour. Mix until combined. Dough will be thick.
Form the dough into a ball and flatten into a disk. Wrap the disk in plastic wrap and refrigerate overnight. When ready to bake, preheat the oven to 350 F. Line a baking sheet with parchment paper and set aside. On a lightly floured surface, roll the dough out to 1/8-inch thickness, or slightly thinner than a store-bought graham cracker. Using a pizza cutter, cut into squares or rectangles. Transfer the pieces to the baking sheet, then prick the dough with a fork. Bake for about 5 minutes, rotate the pan and bake for another 5 minutes, until the edges just begin to turn golden. Transfer to a wire rack to cool completely. Double-bake the crackers by repeating the baking instructions, only leave the crackers until they all begin to turn golden-brown.
