Funnel Cakes

  • 2 eggs
  • 1 c milk
  • 1 c water
  • 1/2 tsp vanilla
  • 3 tbsp sugar
  • 3 c flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • vegetable oil
  • powdered sugar

In a medium bowl, whisk together eggs, milk, water, sugar and vanilla. Sprinkle baking powder and salt over mixture. Add flour. Whisk until smooth. Heat about an inch of canola oil in a cast iron skillet to 350-375 degrees. When oil is hot, plug the hole on the bottom of the funnel with your finger. pour 1/2 c. of batter into the top. Release your finger from the funnel and swirl the batter into an 8 or 9 inch web in the hot oil. Cook for 2-3 minutes per side or until golden. Transfer to paper towels, and sprinkle with lots of powdered sugar.
