Freezer Waffles

- 55 g butter (melted)
- 25 g sugar
- 225 g plain, non-Greek yogurt
- 3 eggs
- 200 g milk
- 5 g vanilla
- 4 tsp baking powder
- 1/2 tsp salt
- 260 all-purpose flour
Volumetric
- 4 tbsp butter (melted)
- 2 tbsp sugar
- 1 c plain, non-Greek yogurt
- 3 eggs
- 1 c milk
- 1 tsp vanilla
- 4 tsp baking powder
- 3/4 tsp salt
- 2 c all-purpose flour
Combine melted butter, sugar, and yogurt in a large bowl. Add eggs and whisk until evenly combined, then milk and vanilla. Sprinkle surface of batter with baking powder and salt and whisk to thoroughly disperse into the batter. Add flour and whisk until it disappears.
Drop batter by 2 tablespoonfuls into mini Dash waffle maker. Cook for about 60 seconds or until just starting to brown. (The middle may still be slightly undercooked, but it will finish cooking later in the toaster.) Place in single layer on baking sheet and freeze before placing them in freezer bags.
When ready to eat, microwave for a few seconds until partially thawed, then toast in toaster.
