English Muffin Bread

- 540 g Flour
- 21 g Sugar
- 13 g Salt
- 1/4 + 1/8 tsp. Baking soda
- 4 1/2 tsp Yeast
- 340 g Milk
- 86 g Water
- 38 g Oil
In the bowl of a Kitchen Aid, whisk together first five ingredients.
In a saucepan, heat milk, water and oil until 120-130 degrees.
Pour into the mixer with the dry ingredients. Mix with the paddle attachment until combined, then beat for 1 minute at medium-high speed.
Grease a long loaf pan and sprinkle the bottom and sides fairly liberally with cornmeal. Scoop the dough evenly into the pan.
Cover the pan and let rise just until the dough has crowned over the top of the pan. Bake at 400 for 22-27 minutes until golden brown and the internal temperature is 190.
Remove the pan from the oven. After 10 minutes, flip the bread out onto a cooling rack and let cool completely before slicing.
