Double Chocolate Biscotti

  • 244 g Flour
  • 30 g Cocoa powder
  • 1 tsp Baking soda
  • 3/4 tsp Salt
  • 113 g Butter, softened
  • 175 g White sugar
  • 2 Eggs
  • 2 tsp Vanilla
  • 180 g Semi-Sweet Chocolate Chips

Preheat oven to 350.

In a medium bowl, whisk together flour, cocoa powder, baking soda and salt. 

In the bowl of an electric mixer, cream the butter and sugar until light and fluffy, 1-2 minutes. Scrape down the sides of the bowl with a rubber spatula. Add the eggs, one at a time, scraping down the bowl and mixing well after each addition. Beat in the vanilla. Add the dry ingredients and chocolate chips and stir on low speed until just combined. 

Weigh dough. Divide into two equal portions. Place on silpat lined baking sheet. Shape into logs 2 cm high and 5 cm long. Leave ample space for spreading.

Bake for about 35 minutes, until firm to the touch. 

Remove from the oven and let sit for 5 minutes. Remove to a cutting board and slice each log diagonally into 2 cm. thick cuts. 

Turn the biscotti on their sides, cut side down and place back in the oven to bake for 10 more minutes. 

Yield: 2 1/2 dozen
