Crepes

  • 210 g flour
  • 3 eggs
  • 1 tbsp vanilla
  • 1 tsp sugar
  • 1/4 tsp salt
  • 28 g melted butter
  • 480 g milk

In a large bowl, mix the flour, eggs, salt, vanilla, butter, and sugar. Using a whisk or electric mixer, gradually beat in the milk until a smooth batter forms with no lumps.

Heat a lightly buttered crepe pan over medium/high heat. Pour or scoop the batter onto the pan, then tip and rotate the pan to spread the batter as thinly as possible. Cook until lightly brown on both sides – about 1-2 minutes on each side.

Makes about 12 thin crepes.
