Chocolate Pie

- 1 prebaked, deep-dish pie crust
- 1 c sugar
- 1/4 c cornstarch
- 1/4 tsp salt
- 3 c whole milk
- 4 egg yolks
- 6 1/2 oz bittersweet chocolate (Ghirardelli)
- 2 tsp vanilla extract
- 2 tbsp butter
Combine the sugar, cornstarch and salt in a medium saucepan. Stir together.
Pour in milk and egg yolks, and whisk together. Scrape corners to make sure the cornstarch is mixed in thoroughly.
Stir continuously over medium heat until the mixture just barely comes to a boil and becomes thick. The second it starts to bubble and thicken, remove it from the heat. Add the chocolate, vanilla, and butter, and stir until everything is combined.
Pour as much of the pudding as will fit into the pie crust and place uncovered in the fridge to chill for at least 4 hours.
