Butter Swim Biscuits

  • 1 Stick butter
  • 2 1/2 c Flour
  • 1 tbsp Sugar
  • 1 tbsp Baking powder
  • 1 tsp Salt
  • 1/2 tsp Baking soda
  • 2 c Buttermilk

Heat oven to 425. 

While the oven is preheating, place the butter in an 8x8 baking dish and put in the oven to melt. 

While the butter is melting, whisk together dry ingredients in a medium sized bowl. Add buttermilk and stir just until moistened. 

Remove pan from the oven. Pour about half the butter into a separate bowl. 

Scoop spoonfuls of biscuit batter into the pan with the remaining butter. Gently spread batter evenly across the pan. Drizzle the rest of the melted butter over the top of the dough. 

With a knife or dough scraper, cut dough into nine biscuits. 

Bake for 20-30 minutes or until golden brown on the top.
