Butter Almond Tart
Sweet Amandine
- 1/3 c sliced almonds, lightly toasted
- 2 1/4 c sugar
- 1 c + 2 tbs. melted butter
- 1 1/2 tsp pure almond extract
- 2 tsp pure vanilla extract
- 1/4 + 1/8 tsp. salt
- 2 1/4 c flour
- 3 eggs
With a handheld electric mixer on low speed, beat together butter and sugar until combined. Beat in eggs, one at a time. Beat in extracts. Add flour and salt. Beat just until incorporated. Pour batter into an ungreased 11 inch fluted tart pan. Scatter toasted almonds on top and sprinkle with a couple teaspoons of sugar.
Bake at 350 for 25-30 minutes or until toothpick inserted in center comes out clean.
Serve warm or at room temperature.
*Add an extra 1/2 tsp. almond extract for a stronger flavor
*Always mix ingredients on lowest mixer speed and don't overbeat. Otherwise you'll incorporate too much air into the batter.
