Blueberry French Toast Casserole

French Toast

  • 1/2 Loaf French bread, cubed
  • 8 oz Cream cheese, broken into little pieces
  • 1/2 c Blueberries
  • 6 Eggs
  • 1 c Whole milk
  • 1/2 tsp Vanilla
  • 3 tbsp Maple syrup

Blueberry Sauce

  • 1/4 c Sugar
  • 1 tbsp Cornstarch
  • 1/2 c Water
  • 1/2 c Blueberries
  • 1 1/2 tsp Butter
  • 1/4 c Maple syrup

Grease an 8x8 inch pan. Layer half the bread cubes in the bottom. Put all the cream cheese on top and all the blueberries. Top with remaining bread cubes and press down firmly. 

Whisk together the eggs, milk, vanilla and syrup. Pour over the top of the bread. Press down so that all the bread cubes are covered. 

Cover with plastic wrap and place in the fridge for at least six hours. 

Remove from the fridge 30 minutes before cooking. Preheat oven to 350. Cover casserole with foil and bake for 30 minutes. Uncover and bake for 25-30 more minutes, or until top is browned and middle is set. 

Let sit for ten minutes before pouring blueberry sauce over the top. 

In a small saucepan, whisk together the sugar and cornstarch. Whisk in water. Bring mixture to a boil and boil for 3-4 minutes. Mix in blueberries and cook until blueberries start to pop. Remove from the heat and stir in butter. 

Pour over casserole; cut and serve.
