Apple Cider Bundt Cake

- 360 g Flour
- 2 tsp Cinnamon
- 1/4 tsp Nutmeg
- 1 tsp Salt
- 4 1/2 tsp Baking powder
- 200 g White sugar
- 110 g Brown sugar
- 224 g Oil
- 3 Eggs, room temperature
- 250 g Unsweetened applesauce, room temperature
- 248 g Apple cider, room temperature
- 1 tsp Vanilla
Preheat oven to 325. Spray a bundt pan with cooking spray.
In a medium bowl, whisk together the first five ingredients. Set aside.
In the bowl of a Kitchen Aid mixer, mix together the sugars and oil with a paddle attachment. Add the eggs and mix on medium speed for two minutes.
Add the applesauce and vanilla. Mix on low speed just until combined.
With the mixer on the lowest speed, Add 1/3 c of the flour mixture followed by 1/2 of the apple cider. Repeat until flour and cider are gone. Mix just until all ingredients come together.
Pour the batter into the bundt pan and bake for 40-45 minutes, just until toothpick inserted in the middle comes out clean. Let the cake cool for an hour in the pan before turning out onto a wire rack to finish cooling.
