Amish Cinnamon Rolls

  • 1 tsp + 1/3 c sugar, divided
  • 1/2 c Warm water
  • 2 1/4 tsp Yeast
  • 2 Eggs
  • 1/3 c Butter, melted and cooled
  • 1/2 tsp Salt
  • 1/2 c Mashed potatoes
  • 3 c Bread flour

In a small bowl, proof the yeast with warm water and 1 tsp sugar. 

In the bowl of a stand mixer, whisk together eggs, sugar, butter, salt and mashed potatoes. Add in the proofed yeast mixture. Whisk in 1 c. flour. Attach the dough hook and mix in 1/2 c. flour at a time until dough comes away from the bowl and doesn't stick to the bottom or sides anymore. 


Let dough rise until doubled, about 1 1/2 hours. 

Roll out into a 13x9 inch rectangle. Spread with butter and sprinkle with plenty of brown sugar mixed with cinnamon. Roll up. Cut into 10-12 pieces. 

Can let rise on the counter until doubled and then bake, or they can sit in the fridge overnight and sit in a barely warm over for an hour or two before baking.
